Build the Cocktail

  • Dry shake first, hard and long. Forty-five seconds minimum. The shaker will feel lighter and the contents will sound different — almost muffled — when the foam is properly built. Cheating this step produces a thin, watery head.

The saponin-protein-polysaccharide matrix in aquafaba produces a voluminous but more fragile foam than ovalbumin. The foam will not hold as long and the bubble structure is coarser, but the cocktail remains visually compelling for 8 to 10 minutes. Add a small pinch of cream of tartar (approximately 0.5 g) to the shaker to lower the continuous-phase pH and improve bubble stability.

Rye whiskey version: A high-rye mashbill (51 to 70% rye) will push more spice phenols — specifically rye-derived methyl pyrazines and piperidine alkaloids — into the foreground. Can I use store-bought cherry juice instead of making the shrub? Store-bought cherry juice produces a passable sour but misses the two functional layers the shrub provides: the smoke-phenol integration into the acidified brine, and the passive fermentation complexity that develops over two weeks. The result tastes sweet-tart rather than deep and smoky. If time is the constraint, look for a commercially produced cherry shrub from a craft producer rather than juice — the vinegar backbone is the non-negotiable element.

Is raw egg white safe in a cocktail? The risk from Salmonella in a raw egg white cocktail is low but not zero. That risk is mitigated considerably by the acidic, alcohol-containing environment of the finished drink: the cocktail pH of approximately 3.6 and the approximately 15 to 18% ABV at service concentration both create an inhospitable environment for bacterial growth. Pasteurized liquid egg whites eliminate the risk entirely and perform nearly identically in foam applications.

My foam is coming out thin and draining fast. What went wrong? Three likely causes in order of probability: fat contamination in the shaker or from a trace of yolk; insufficient dry-shake duration — 45 seconds is a minimum, not a suggestion; or egg white that has been frozen and thawed, which degrades protein conformation. Rule out those three causes in order. If all three are clean, check the egg white quantity — less than 25 grams will not produce a structurally sound foam in this volume of liquid.
