  • In a small bowl, combine the kosher salt, brown sugar, black pepper, and garlic powder. Mix well. This is your dry brine.

  • Apply the dry brine evenly to the outside of each fish and inside the cavity. Use roughly two-thirds of the brine on the exterior and one-third inside. Place the brined trout on a wire rack set over a rimmed baking sheet.

  • Refrigerate uncovered for 2 hours. The salt will draw moisture to the surface via osmosis. After 2 hours, rinse the fish briefly under cold water to remove excess brine, then pat completely dry again with paper towels.
