Recipes by Diet

Every recipe we publish lives in at least one of these diet buckets. Browse by your eating pattern — without sacrificing smoke flavor.

Most BBQ recipe sites treat dietary needs as an afterthought — a separate "keto" tag with fake-meat substitutes that don't respect real smoking technique. We take a different approach: each canonical recipe has a set of diet variants built from the same smoke, same rub, same wood — with the ingredient swaps that make it work for each diet without changing the technique.

? Gluten-free

Most BBQ is already gluten-free — meat, smoke, and salt rubs don't contain gluten by default. The trap is in the commercial sauces, marinades, and beer-based braising liquids that quietly use wheat-based thickeners or barley malt. Our gluten-free variants verify every ingredient down to the rub mix and call out specific brand substitutes where needed.

Currently published: Gluten-Free Texas-Style Brisket. (More variants land as we re-test the canonical recipes.)

? Keto / Low-carb

Keto BBQ is mostly about getting the sugar out of rubs and sauces. The technique stays identical — what changes is the rub formulation (no brown sugar, no honey-powder) and the sauce build (monk fruit, allulose, or just letting the smoke be the flavor without sauce at all). Cocktail variants substitute simple syrup with monk-fruit/allulose blends.

? Low-sodium

Low-sodium BBQ is the hardest dietary variant to pull off because salt is doing most of the work in a traditional rub — not just for flavor but for the bark-formation chemistry. Our low-sodium variants compensate with herb-and-citrus rub builds, longer smoke times to deepen Maillard reaction, and acid-based finishing sauces.

Currently published: Low-Sodium Texas-Style Brisket. (Cocktails are naturally low-sodium — no variants needed.)

? Vegetarian companion recipes

We don't do fake-meat brisket. We do vegetable analogs that earn a spot on the same backyard table — smoked cauliflower, fire-roasted eggplant, charcoal-grilled romaine — using the same smoke and technique as the meat dishes they sit next to. The goal is longer tables, not higher fences.

Currently published: Vegetarian Companion to Texas-Style Brisket (smoked cauliflower steaks). (Cocktails are naturally vegetarian.)
