Ingredients
  

  • 4 Medium Peaches
  • 1 cup Heavy Cream
  • 2 Tbsp Honey
  • 2 Tsp Ground Cinnamon
  • 750 ml Champagne

Instructions
 

  • Grill the Peaches: Preheat your grill to medium-high heat. Cut the peaches in half, remove the pits, and lightly brush with olive oil. Grill cut-side down for 3-4 minutes until char marks appear, then flip and grill for an additional 2-3 minutes until tender. Let cool slightly.
  • Blend: Slice the grilled peaches and place them in a blender. Add a splash of heavy cream (about 1/4 cup), the honey, and a squeeze of fresh lemon juice (optional, about 1 tablespoon) to the blender. Blend until smooth and creamy.

  • Assemble the Mimosas: Fill serving glasses halfway with the grilled peach mixture. Slowly pour chilled champagne over the peach puree until the glass is filled, gently stirring to combine.

  • Garnish: Garnish each glass with a sprig of mint or a slice of grilled peach for a touch of elegance.

Notes

The grilling step is the non-negotiable foundation of this recipe. Direct heat at 450–500°F initiates Maillard condensation between the peach's amino acids and reducing sugars, generating volatile lactones (notably gamma-decalactone) and furanones that produce the cocktail's distinctive depth. The heavy cream's milkfat phase preferentially partitions these higher log Kow aromatic compounds away from the aqueous phase, slowing their evaporation and extending flavor in the glass. Honey buffers the lemon's citric acid to a working pH of approximately 3.4–3.6 — bright but not harsh against the champagne's own acidity (~3.0–3.2 pH). Chill the purée to 40–45°F before assembly; pour the champagne slowly down a tilted glass to preserve dissolved CO₂ (target: 38–42°F serve temperature). Batch the purée up to 24 hours ahead; never pre-mix with champagne.
